INGREDIENTS:
2 Eggs at room temp
1 1/2 tsp Baking Powder
3/4 Cup Granulated Sugar
1/4 Cup Almond Milk, unsweetened
2 tsp Vanilla Extract
1/3 Cup Verbena Vanilla Bean Olive Oil
1 1/4 Cups All-Purpose Flour
1/4 tsp Salt
DIRECTIONS:
Preheat oven to 350 degrees. Spray an 8x3.5 loaf pan with nonstick baking spray and set aside.
In a glass bowl, add the eggs and then sugar. Using a mixer, beat until well-incorporated.
Pour in the unsweetened almond milk, vanilla extract, and olive oil, then blend until smooth.
In a separate bowl, sift together the flour, baking powder, and salt.
Slowly pour wet ingredients into dry ingredients, mixing as you add the wet ingredients.
Transfer to a greased loaf pan. Bake for 50-60 minutes, or until a toothpick inserted into the middle of the cake comes out clean.
